I got frustrated with Ghost Recon Breakpoint, so I never bothered to try Wildlands.
Breakpoint's DirectX binary wouldn't launch, and the Vulkan binary was unoptimized. Furthermore, shortly after I attempted to run the game Ubisoft updated their Ubisoft Connect application which [temporarily] broke compatibility with Steam OS.
Finally, this was all going following the Steam "launch" wherein I couldn't even log into the "Single Player Campaign", presumably due to the US East Coast Servers being overloaded. It was like the Diablo III launch. Which means the game isn't playable when a portable device is offline due to the lack of an internet connection while traveling.
How is "freezing and crashing" your gripe with any modern Ubisoft title?
Does Wildlands support DirectX 11? DirectX 12? Vulkan? Have you tried switching which binary you are running? Have you tried switching Proton Compatibility modes? Maybe try Proton Experimental?
Could be a memory leak, possibly in the latest Ubisoft Connect, or even in the Denuvo Anti-Tamper implementation, if not simply the game itself. Might be running out of RAM. Lowering your texture resolution might free up some of the shared memory pool to increase the amount of time before a memory leak crashes the game.
I read also it was working well some weeks ago.
It was working at some point? Strange.. hopefully that means it can be fixed

Anytime I try to open ubisoft connect in desktop mode I lose control of everything except the ability to move my mouse cursor. Any tips?

Figured out I can use the touchscreen! Hopefully this is fixes the issue, I'm excited to try it when I can! Thank you!
I had the same issue. I connected and external mouse and everything works perfectly. Try to do that.

SouYi's linked thread above lists two posts with information pointing towards it being an issue related to the Ubisoft Connect application, and perhaps more specifically with regards to the in-game overlay.
I am not certain whether this issue is limited to the Steam Deck, or to Proton/Linux, or if it occurs on Windows also (Like with Halo MCC's Combat Evolved).
