Then, if it's a native Linux version, you just start it. If it's not, add this to Steam as a non-Steam game so Steam will run it through Proton.
There's also Heroic Launcher & Lutris which get recommended rather often which solve the issue of starting games from other shops through Proton. Doing that manually wouldn't be exactly impossible, but quite the PITA.

Or really, just forget about it and stick to Lutris/Heroic. The great thing about the Deck is that you can dive into the nitty gritty technical details if you want, but don't have to if you don't want to.

nope, its not always that simple. you must watch the video, and also read protondb reviews:

if a game is rated as "silver" it will run with minor issues that may be solved with special settings or not; if "gold", there will be minor hiccups, but in most cases wont affect gameplay; a better rating means its likely going to run without issues related to compatibility, but that doesnt mean that other bugs can exist related to the game itself.
also, in some cases, sometimes a game that has a native version for linux may not run as well as its windows version using proton. in most cases native version works better than proton, so its worth to check if which games you own have it.

fifa 23 currently doesnt looks to be working, but that may change in a few months; in most cases it depends in the original developers more than in valve or other devs working in proton like glorious eggroll.
fifa 22 seems to work well, so if you want to play fifa you should get that version, or wait until fifa 2 becomes compatible, which may or not happen soon.
SteamOS will pick the best option to run the title (i.e. for Windows titles, it will default to some version of Proton). If the game has a Linux version, Steam will default to using it's native runtime to run the Linux version.

There is an issue with EA titles currently if you have never linked an Origin account to Steam up to this point.
FWIW, it doesn't appear they have changed the Launcher for the Madden series (at least not yet).
FIFA, Madden Series, NBA2K series, etc... Garbage Pay to Play with Low or No improvements except to Rake in more of your money...
