There are quite a lot of options it appears. most of them tend to be around 16 inches in size, not sure exactly what size you are after. The key will be finding one that fits your needs.
I would look for a monitor that has decent response times and is fairly low power. It will take a bit of research but should be doable.

You could plug the adapter into the lighter, run the usb power into the dock, then plug the steam deck into the dock, and then run outputs to your monitor, keyboard, mouse, or whatever else you want to plug into it.
It looks like the total cost will be around 200 dollars or so to get all the equipment together.
And of course you will want to run your car occasionally to keep the car battery charged. If you are parked and running your steam deck a lot, you could run your car battery down if the car is not actually running to keep it charged.
Alternatively - if you are parked somewhere you have access to power with a cord, like at a campground or something, then you could just use your steam deck's included charger and plug that into the dock to power everything.

Not for the same purpose as your, but I created an emergency travel setup I use which is a 10" portable monitor, Anker hub/dock with 100W PD, Bluetooth keyboard/touchpad with 3 channel binding memory (i.e. it can remember 3 separate bindings). This allows me to bind my phone and Steam Deck to use in the situation my work laptop is lost or broken during travel.
That's a good idea man, always be prepared. I would throw in a small battery bank in that setup, i got a small one as a gift with built in solar panels; really cool.
