The selected resolution seems to be stored as binary data (as opposed to text data) in C:\Users\<username>\Documents\Stronghold Crusader\crusader.cfg at offset 0x12b. This is a Win7-64bit system.
My initial resolution was 1366x768 (my displays native max) and that location contained 1
Changing resolution in-game to 800x600 (my displays native min) changed that to 5
Try hex-editing this to 5. If you don't have a hex editor already, give HxD a try.

You can go to the position by pressing clrt+g and typing "12B", then change the value in the decoded text on the right to 5 and save the file.
