Get your stockpile, granery, market, and merc outpost set up as quickly as possible. Always be training archers, non stop. Wall up your keep except for a small openning off to one side where it will be easy to bottleneck your enemies. Concetrate your defenses here are the AI will always go with the "easy" path inside your castle. Build 2-3 large towers near the hole in the wall and place a brazier on top for fire arrows. You may have to the market to buy stone. Sell any "junk" starting items if you need money. Use your magic to create gold as well. Use a piece of wall beside the tower to create a landing and a doorway, place stairs. Start placing the archers in the towers as soon as you train them. If you have several groups of your archers heading for the towers at once you can break the max archer amount. I usually get 50-60 in each tower. Now using the small stone walls make a maze for the enemy soldiers to have to go through. Make sure you don't give them a path into your towers though. You will shread them before they get through. Now use your magic to bombard the enemies spammable merc outposts as you can, destroy them all. Now train about 120 horse archers and maybe 30 armored mercs and head out to kill your enemies!

The only issue with this is figuring out how to keep your people fed will building up these defenses. Since farms use wood in building it won't effect your wall and tower building. Apples and cheese are good to start, but wheat is your best friend. Build the farms, wind mills, and bakeries to mass produce food. Upping your food allowances and making nice things (gardens and statues, ect.) will help you keep your popularity up enough to raise your taxes.

Don't even bother with trying to forge weapons and armor, it's a waste of time. In this extreme mode of Stronghold Crusader you are much better of with mercs.

Can you capture the ennemy outposts towers to produce your troops ? I just did one game, the first for now.

No, you just need to destroy them. It usually takes 2 stone rains (the last spell) to destroy them but if you save before you use your spell and reload if you don't destroy it in one blast you can get it in one shot. Also, if the level gives you ground troups you might want to send them out to destroy close outposts. Winning a level is all about taking out the merc outposts before the AI can spam you with them while setting up your economy for the final army build to kill all of the AI.
