Better yet, dont do it yourself.... let the Island editor experts in the workshop make one for you; these guys can put the efforts of us normal guys to shame :) There is a clear need for folks who want large islands.... there are some now but there will be more/better later, possibly even pulled straight from game (it can be done with great hassle, according to discord)
Here is an island advertised as "Large Island Size" that looks as good as anything in game.

And here is the one I am using .... fairly small, but I still have tons of animals/farms and not even coming close to using it all... in terms of style it frankly puts all others to shame in the workshop at the moment, It also has complete instructions on how to add it.

NOTE: Two simple (and obvious) things you need to do that is often not told to you:
1) You need to subscribe to the island in workshop, then start your game, for it to be available to you
2) Before you despawn your old island you've been using as home base... you will lose everything you built/stored on it unless you (in advance) deconstruct your important stuff and temporarily store it all in come containers on yet another island.... then move it onto your new workshop island once you spawn it in.
