Idk about you guys, but i have loads of birds but only found one gerbil.
A guide for what critters can live in what biomes would also help a lot.
It may be unrelated, but I actually spent hours attempting to find what critters go where, and ended up with the research beneath. I'm not sure it's ALL of them but uh .. figure it's most. Yes, you can technically find some in other biomes, but they are deemed not native / natural (as shown in the field guide).

You can catch butterflies (and moths) with the Net tool you can build at your work table.
The lizards I could just pick up off the ground (when they're visible).
It seems like you can increase the chances of hidden insects becoming visible on an island by planting more matching (flowery) flora on it.
I got those from knowledge stones.
Found a Purple Lizard in Fallen Heights
I'm having the same issue. I can even BUILD the proper habitats or vivariums. As you try to place it, there are three choices you may access by using the "1" or "3" keys. But EVEN with the correct habitat for the biomes and my critters in or on them, my animals (frogs so far) haven't counted toward fixing the island's ecosystem. Quite frustrating! :-(
No need to use a vivarium. For small animals, you can place a purple lizard and a blue jay in Fallen Heights. Just spent like 15 minutes tonight solving that one on a tiny little island. Then once solved, turns out I had completed all for that biome for the stone with a hole and a ribbon tied in the hole (no idea what that is called).
Trick to this game seems to be to collect every bug, animal, plant, rock, wood, etc. that you find that looks at all interesting and useful. You are bound to need it later. That brings up the one thing I find a bit annoying in this game. Not a big enough hotbar (would be nice to have two you can swap between). Like one for combat and a 2nd for when you are running around harvesting everything. And then more inventory space. If the hotbar didn't take space, that would make the first category big enough. And then the last one keeps filling up, so maybe split it up or make it bigger.
Inventory management is a constant chore in this game. The storage boxes are just too small, even the single purpose ones get filled up. I suppose I could throw some stuff out, but that goes to my first point, you never know if you will need it and how much you will need until you need it, and then you better have enough or you have a heck of a long trip to go back and get it. So I just keep everything. Now I don't harvest everything, but all the rarer stuff I do mostly.
There is something which I think is called a Stormchaser. Put it next to your helm. You can select different things to search for. The top one is the knowledge stone. Once activated smoke comes out and points toward the island that has the knowledge stone. You navigate to it and then search the island for the oblong shaped stone with a ribbon. There will be a unique sound coming from it and also a shiny visual effect that you can often see from a bit away.
The game is like any game with exploring where you search for stuff. Look behind that waterfall if there is one
I think the island you start out with has 3 of them, but not exactly sure.
