Will the game be playable completely offline? As in, if I put steam in Offline mode and disconnect my Ethernet cable, will I still be able to play?

It's a sad world we live in where this question even needs to be asked, but here we are. Games as a service is a cancer that should be erradicated.

Does this mean you will be working on a multiplayer LAN/wi-fi set-up as well? I don't expect it for EA, and it is pretty old-school, but it is nice to have the option to play locally with friends from the neighborhood. Especially when the game is so kid-friendly. In the same vein, a tablet interface would be good for kids playing together.
