is it worth selling moonstone bars or is iron better for quantity, availability wise compared to how long and hard it is to get moonstones
In the first year it is hard to get enough moonstones.
If you want some small change extra, collect all the empty treasure chests from dungeons and mines. they sell for 50 each.
I wouldn't sell moonstone bars unless you have more moonstones than you could ever use, personally

I had 300 spirit drops (variety of all the different kinds) and it only got me about 132,050 g
That took me three hours of real time grinding for it, trying to get the one million achievement seems very hard out of all the other achievements to me atm
You asked how to get money _quickly_, and you got good advice for that. But if these achievements are what you're after, then it's actually much better to _wait_.
Spoiler alert - here are the details:
After finishing a certain late-game quest, you'll get the blueprint for a machine that costs 3 moonstones, and produces one moonstone per day. This means you can build one machine, then the next one after three days, then the next one after two days, and so on - you'll be able to build more machines each day because you'll earn more moonstones each day, it's a never-ending, self-sustaining feedback loop that will shower you with moonstones.
This makes it extremely easy to get the 2000 moonstones that you'd need to sell for the "one million coins" achievement. If you want to do it even quicker (but with a bit more manual work), you can also melt the moonstones into bars and sell those to Ferra, because at that point, you'll have more moonstones than you'll ever possibly need.
So, in short: If you're trying to do the "one million / two million coins" achievements right now, then you'll have to put a considerable amount of work into that. But if you do it later, when you have an endless supply of an expensive resource at your disposal, you can do it much quicker and easier.
