Sorry for the late replay, still shoulders deep in the development.
On the topic of builds, they are supposed to be more or less equal in terms of strength. Ideally, you can choose any build and any stance that suit your playstyle best. I'm inclined towards the shield knight as well, but quite a few of our testers preferred the spear or the greatsword.
Also, there's a cool feature that makes the sword stance's Double Edge work extremely well with the Ultimate Defence you mentioned, so it's all about combos and, sometimes, switching stances on the go.
There will be much more variety in the future. For instance, equipped boss parts might give you new ability cards, and you can also obtain cards for leveling up your puppet in the dungeon. We might add special in-dungeon events, too, so you'll have lots of agency in tuning the puppet to match your preferences.
