I don't think the text gets less garbled, you just get better at reading it. During my first playthrough, I dismissed them as unreadable nonsense until I got to the King of Puppets and started being able to make out words. On my second playthrough (not NG+), I was able to read the subtitles for the earlier bosses.
I think the main variable here is time - the King of Puppets fight has more downtime at the start of the fight after your first attempt. This gives you more time to look at the subtitles and, eventually, try reading them. That, and the fight's harder, so you're probably going to need more attempts to beat it.
