Black Cat ignored
I know I’m a bit late to the party but I didn’t have the fruit and didn’t feel like killing him so I just walked past Black Cat, Went up the elevator and didn’t check him till I killed the Fox and beat the game and he’s not there anymore. Can’t find anything online either, does he just disappear? Or am I missing something?

I haven't tried that specifically, but he probably just disappears. That's kind of the game's default when you ignore someone/thing.

Wait, you can actually NOT give him the gold coin fruit and NOT trigger the boss fight? I always give him the fruit, so I don't know about how the other option turns out. If you truly did neither, I guess it was a bug.
Also, bug or not, optional bosses that you skip don't hang around after the game ends afaik.
