The protagonist is Pinocchio, so male, assuming it means anything in that context. He's just very androgynous.
Also you forgot Nioh and The Surge, you couldn't change your character here either.
Apart from that, I can easily name you some soulslikes without gender customization in Thymesia, the Fallen Order-games, Steelrising, Lords of the Fallen and probably more I haven't played.
I mean in all reality, a game set in the 1800s where you are slashing up robots and monsters and you actually act like you are worried you can't relate to the character because you can't change the gender?
Makes no sense... play the game because it is fun to time attacks and dodges and kill ****, not because it's cheaper than going to your therapist.
Hence protagonist is male.

And regarding gender of Pinocchio :
-Pinocchio in every story/movie/cartoon was referred as boy.
-It is a Puppet, but Puppet who look like a boy and want to be a real boy.
