I'd also recommend giving a sword & board build a try in Elden Ring. I agree that mage builds are generally really boring there.
Code Vein is also decent but that's already going into the ''meh'' territory. maybe you'd like it more than I did
Sekiro would be the closest to Lies of P; play that one and ignore the rest.
If you're considering getting DS3, I recommend that you get the DLCs too. The Ringed City is better than Ashes of Ariandel, but I think that both of them are worth the price.
There does tend to be a bit of a difficulty hump in DS3 right near the beginning of the game. Don't get discouraged though, once you get through the first main area (after the tiny tutorial area) you suddenly have access to a lot more options for weapons and magic, and better grinding spots if you really need them.
I played a similar one called Thymesia too, it's a short game but it's pretty difficult and all about the parry timing.
Dark Souls 3, Elden Ring, Sekiro if you liked the parry mechanic. if you have a ps4 i reccomend Bloodborne
Elden Ring also has a parry mechanic mod that has the parry mechanic and the rolling of bloodborne
