I think at least, I didn't really need to pause it during fighting, but I think you can't.
I have never ever needed to pause it during action in my 104 hours of playtime so I wasn't 100% sure, but I just tried it and you can't.
Unfortunately that won't be the case for me, I've literally died 100+ times in Souls games due to not being able to pause during a fight when I have to go do something else temporarily. So other than Fromsoft games that I already bought, I decided to never buy any other single player games that doesn't allow you to pause.
You can easily find safe spots within seconds and I think that not wanting to try an amazing game because it has no pause is almost like not playing a game because you can't select gender lol, I understand that it might be annoying for someone, but this being a no buy reason is pretty... interesting lol
This game's quality is definitely right next to the best FromSoft games, it's definitely in my top 3 games, first being Elden Ring and the second one is either Sekiro or Lies of P, the third one obviously is also either Sekiro or Lies of P.
I have no idea why do you need to pause the game constantly, but I think that if you decide to play a game, you should have time to play it in order to enjoy it instead of keep pausing it for some reason to do something else.
My gf needs help around the house all the time, so I move my butt and go help her instead of saying "no I'm in the middle of a game" or "give me a minute because I need to finish this fight".
I also have 2 cats that need constant attention, if they caused troubles, want petting, or simply need help. I need to go out immediately if I see my cat getting bullied by the neighbour's cat on my lawn, not wait around and make sure my "digital character" is safe before doing so.
I also need to pee every 2 hours or so like a healthy person does.
So in short, I need to be able to pause a game because I have a life that comes with many responsibilities/tasks that I prioritize over a video game. There is not a single compelling reason why a single player game does not have a pause feature, so I don't see why I have to make sacrifices to accommodate this bizarre decision, and I refuse to support any dev making such a game, no matter how great it is otherwise. Out of all the SP games I played, Souls-like are the only ones that do this, so it's not like I'm missing out on 50% of all video games or anything.
I would just not enjoy playing games at all if this was my daily routine. Playing games is just my time for relax you know, if I had to constantly do something else while also playing, it would ruin my whole experience of the game and maybe even my mood lol.
To each their own I guess.

Edit: I can confirm that it does work for LoP as well as all of the Souls games
