Once/if you are at NG+X and overlevelled, then you can have everything.
As tempting as it is to add in other stats just to make another style of weapon you found more powerful, it's usually best to to be very proficient in one or a specific combination of two stats for your offense and commit to that.
Other than offense, I try to upgrade what I think I'll need help with. Health is ALWAYS a good option, but. If you're not getting hit much or are ok with managing what health you have, bump up something else, like your offense.
Same with stamina. If you're ok managing what you currently have, up something else. It's a waste to up stamina until you find yourself struggling with it. It regenerates at a good rate, so it's usually one of the last things I upgrade until ♥♥♥♥♥ starts getting dicey. I also keep capacity just under the edge of what's needed. The window for it is pretty big and it's no big deal if I can't equip something right away. I usually just drop my next one or two points in capacity and I'm good again.
Luckily, you can respec your character stats to match what you want to use for offense when you find new weapons. It's not until after you beat chapter 7, though and you can not come across it. So after chapter 7, I'd look up the location. I beat the whole game and never walked into that room, lol. Completely missed it.
I beat the game a few days ago (on gamepass) and leveled Vitality, Capacity, and my main damage stat Technique equally until I hit a soft cap in Vit and found exactly what gear I was going to be using. At that point I respec'd an removed every excess point in Capacity so I had just enough to be at 'Slightly Heavy' weight, and then put as many points as I could in Technique to maximize damage. Worked well for me.

Forgot to mention Vigor, it's mid-priority beneath Vit, Cap, and Mot/Tec/Adv. I never felt like I was lacking it even though I never dumped stats into it.
incorrect. every weapon in the game benefits the most from leveling motivity/tech together at the same level. i.e. you always gain more damage (amongst other benefits) by leveling motivity/tech +1, than leveling either stat alone at +2.
