oh yeah, when someone feels the game intended to be played with dancepad + blindfold + make yourself drop from balcony floor 100 if gets any damage.
Given how busted strong the Blind Man Spear handle is I'm guessing a lot of it is because people don't find it or don't give it a real shot.
The element weapons with advance scaling are popular with advance builds from what I've seen. Outside of advance builds the damage isn't amazing for tech or motivity users. I feel people wanted to really like these weapon but outside the beginning of the game with the coil hammer if you aren't spec'd for it you don't get that much benefit.
The exploding pickaxe is fairly recommended on motivity builds and is the handle I'm using with the bone cutting saw blade. Coil Mjolnir handle is really slow so I can see why isn't popular.
I saw at least one person using the baton as is until they got the holy ark sword.
The cursed knight's halberd and shovel have great movesets, but people maybe turned off by the quality scaling since if they are tech or motivity builds. They seem great for advance builds though.
I think the chef's knife is outclassed by the tyrants murder's dagger. I saw a youtuber use it in their crit build.
The rest of the weapons I never seen anyone use outside of testing the moveset. I never seen anyone even find the blind man's spear in their playthrough.
Ya know why they did that....heh.
Anyway atm im using the Live Puppet Axe with the Master Chef handle funny enough. Sure the original cleaver doesn't have much range on the flurry but when you have an axe head bigger than your whole body on it, suddenly range ain't an issue on that fable art anymore.

People finds their dream weapon and doesn't switch at all. I think Elden ring is the only one that I have seen where people actually used all kind of weird ♥♥♥♥.
So I max upgrade all elemental weapon except buzz saw.
Crystal Axe and Blacksteel are what stick to me with balance moveset and damage
I also tried out a certain gold-colored secret weapon of a golden color, but while the move set was fun, that thing just feels awful to use because P has to do a little twirl every time you wanna stop swinging your weapon to do anything else.
Because there's usually no need to. You stick to a stat investment and you keep the weapon that aligns with that. Not just that, you get used to a moveset too. Switching it up can be fun for sure, but for progression sake I can see why people stick with familiar things.
In every Souls game, my go to for a first playthrough was always the Claymore. It was absolutely bonkers in DS1, wasn't as strong in the sequels, but due to it's familiarity it still helped me a ton.
