Some advice: (spoilers)
1. For first fight, focus on perfect guarding big boy. Once you break his weapon, the fight will become much easier.
2. Stamina management is a key, make sure you have full stamina bar when going in for an attack and always leave a bit of stamina left to be able to dodge or sprint away.
3. You can out-pace most big boy combos and fury attacks if you run away and circle back to land a hit or two. A ward of warning about his jump attack where he goes up in the air, it has ridiculous range and tracking and you should guard it as it is very hard to out-run or time your dodge right.
4. For second fight, kill the lady that inflicts decay first. She is absolute nightmare if let last when she pairs with big boy. Spear guy should be next as he applies heavy shock status, which can be dangerous. Sword guy with fire buff can be last but I would suggest you damage him to at least third of his health before kill the rest so it is easier to dispatch him once big boy awakens.
5. For second fight, big boy's attacks including some of his fury attacks can be out-paced. He has very long and hard hitting combos that will drain your stamina if you try to guard them. Just run away and circle back after his Fury attack, he get exhausted and stand around for a while.
6. For second fight, dodge forward through the blue wave or hide behind objects. Do not guard it as it depletes all your stamina and leaves you vulnerable.
7. Never stay in combat or in one place for too long, land 1 or 2 hits and reposition. Let your stamina replenish and you also avoid ranged attacks or big boy drive-by attacks.
8. You can fish for back-stab on smaller companions but I could only reliably do it on spear guy and fire guy, the lady was too agile to get in position reliably
While I generally dislike gang-encunters in Souls-likes, Brotherhood fights were done quite well. They were also refreshing after killing so many human, carcass or puppet bosses. I'm using slower weapon with longer reach so I had to learn proper distance to engage but could do hit and run tactics quite well due to weapon range and its high single hit damage.
