The game most likely reset your total spent ergo(on leveling), the game still thinks your lv 40, but because you total ergo was wiped it displays your default level, and you probably have a huge ergo debt.
I theory(never had this glitch) the second way requires you to get enough ergo to go from lv 2 to 41.
The cost to level to 41 would actually be the debt + the amount of ergo to upgrade from 40 to 41
The third solution is restoring an older save(go to title screen and paste to old save into the games save folder to bypass cloud sync, then load your old save in game), but it's unlikely you made any backups.
