tl; dr version: Souls(like) games aren't action adventure games anymore, they're rhythm games now. They've completely lost the 'souls' part.

His video is entirely about Souls series specifically and fromsoftware, not other people who choose the same gameplay style for their games.
He's not wrong though, Fromsoftware are creatively bankrupt. That said, Lies of P takes heavy inspiration from Sekiro in terms of gameplay, so really you're 4 years too late OP.

Literally trivialized the Mad Clown by using my grindstone at the right distance (not even because I had to - just to use it), as I noted he would punish it like healing (distance punch). So I "outsmarted" it by forcing him to give me the easiest move to perfect block until I could stagger him.
Most enemies with "punish moves" can be exploited with a little know-how. Just like using the Puppet String to escape something about to smack you if there are other enemies around by Tracing into something weaker (and enemies can be pulled to get in the way of others, which can cause them to whiff a charge attack or something because of the collisions).
No one wears a Father's mask when you're wearing full giant's armor..
