Poise as a stat is not present. Any attack will interrupt your attack animation. There are fable arts, usually on handles, that allow you to continue attacking despite being hit, and even absorb some amount of damage.

It does, if you can make it to the last 2 frames of a fable art or charge attack actually going off, you seem to have hyper armor. But I'm not joking, it seems like it's literally you have to be 75% the way through the animation or the slightest gust of wind will interrupt you. I freak out more when I hyper armor through something then when it fails it's so rare.
