I just dont wanna over level. I still only have 4 flasks cause i decided to go another rout with the perk system.
Im not even using summons but dude endorphin rush you get when beating these bosses is top notch. Some of the hardest and best fights ive seen in any soulslike including DS/ER. Its funny cause you know when you die in a boss fight sometimes you'll start to feel really annoyed. I oddly dont feel that in this game.

maybe just play the game and level without xp farming
You can beat everything without really leveling stamina (took the base 12 from the DEX build starter all the way to Manus) and as long as you can afford 3 hits life is good. Carrier Amulet +1 eliminates some need for weight cap upgrades, so just need to really focus your damage output.
At that point - guess it depends on your reliance of elemental projectiles/damage. Do 50/50 if high, otherwise I think 75/25 works (want some points for things like Door Guardian to use consumables to rush him).
Biggest problem in my run, Black Rabbits 1 and maybe Laxasia because perfect blocks where more pertinent, but I just learned enough to break their crap and reflect the lightning and went back to my usual strats (nameless was on NG+ so not counting him).
but levelling here doesnt actually make you powerful.

Ty for giving me a logical/to the point answer. Ima try 60 and see how i like the feel. I still haven't lvled any weapons up yet cause i wanted to save that for NG+ when i have all the boss weapons/weapons i find.

in my opinion, there's no reason to stop leveling. since there's no PvP or multiplayer of any kind, the concept of "meta level" doesn't really make sense here. in fact, per-level cost increase for leveling up soft-caps at ~16K ergo, so you're encouraged to level up more the further you go in the game. not that it matters before NG+, because you won't be getting enough ergo for more than 1 level up even from late-game bossess.
There is no definitive level to stop at here. If you wish to stop, only you can truly decide what the right level is, nobody else, as everyone's experiences will differ somewhat.
Some people will beat the game using spectres, some will beat it at high level, some will beat it at low level, different weapons, emphasis on slow and hard hitting or fast quick hits, some heal more, some heal less, some are parry / perfect guard gods.
Outside of you actually telling people what level you stopped at to beat the game, nobody will know, and (not trying to be rude) nobody will truly care.
Cut off point is entirely up to you, as long as you're having fun.
