Those Souls/ Sekiro/ whatever "veterans" that are growing from the interwebs like mushroom after an autumn rain are like a plague.
Meanwhile there are "no parry" videos from the Demo already out... guess they dodged?

Some people expecting a next BB or Sekiro and don't find it, while others are annoyed, that it's too similar and too little original.
It's pretty hard, to nail it and I hope, that it can assert to be somewhat enjoyable for both groups, otherwise it'll get hard.
My guy, it feels to me that you wrote this after coming out the game hot. This is not an attack, just an observation what it feels like, i have those days too. Either way, ill take the time out my day to drop my views on your point since it seems like your a fellow reasonable person and there is not many of us left on these boards.
1. It doesnt feel like a rip-off / knockoff at all to me. It wears its influences on its sleeves down to the really meticulously imitated mix of Souls X Borne UI with their own styling. Clearly this is not a Sony or AAA funded title so you gotta cut em a little slack for some compromises in the Art department. But its clear its a love letter. Calling it a rip off is akin to call it a cash grab, and there was a LOT of passion poured into this game. Its not hard to see.
2. Combat not good at ALL? No, just no bro. is it Sekiro precise? Neh, but it is most definitely not massively worse then DS3, certainly not then BB. give it a whirl (pun intended) again and play around with it a little if you love the genre. There is stuff to enjoy if you meet it on its own term. I finished the demo with all weapons and found a lot of variety. First boss i thought its all garbage, with the third one i started to figure out this games particular "Dark Souls Janks". Rapier is definitely the way to go in the beginning, dodging the first boss becomes trivial, parry timings are a bit tight but there is zero health loss when mastered, and it can be mastered after only a few rounds.
3. The bosses are on the simpler side, thats for sure, but this is the indie Studios first Soulslike. In my opinion they did a tremendously good job with this so far, and while its not on the depth and fidelity of Froms games, its well done and fun leaning towards a simpler structure with an interesting theme that for now does not feel fully realised due to budget.
Again, if you love the genre i would recommend tailoring your expectations lightly, meet the game on its own terms and try it again. I feel there is a lot to like and arguably even potential for love.

So i’ll start off by saying yes i do agree 100% that this game isn’t gonna be exactly like those other games i had mentioned in the OP and they put their own twists and turns since it’s THEIR game so i did give some leeway but you can totally see numerous things like dodging, lighting the lamp on your belt (firefly lamp or whatever that is) down to not being able to use an item so your character shrugs or whatever like they do in other souls games and also the healing it’s pretty much the same as bb. but it still feels just off to me? like everything.
Since you roll and dodge so slowly it’s so hard to get in a true combo and do some good damage without getting absolutely wrecked by whatever it is your fighting. for instance when you go to fight the mad donkey there’s two enemies with swords outside the gate and unless you hit run hit run hit run you are gonna use at least 2 of your healing wares. i mean what is that? the attacks or literally instant like i said before.
the parrying is meh and i know how to parry all that type of stuff but it just feels off idk how to explain it.
all the weapons do feel slow (except the rapier like you mentioned) or at least decently slow. even just in between two hits it’s slow as heck. so really all i do can do is hit them run and wait for an opening and hope they don’t instantly attack me like it always seems to do. the parrying is meh because half the time i get them half the time i don’t.. again attacks are almost always instant so it’s hard to hit them have time for your character to parry. it’s just very weird to me like it feels maybe something with the frames i dunno.
Another thing i’ll say is i shouldn’t have said “rip off” but rather just embracing its influencers on its sleeves. you put that in a great way to understand but i still do think that if they are going to try and make a souls borne game then really should put a little more effort in the combat mechanics. some other things as well but mostly combat/dodging mechanics.
i could knit-pick and say some stuff about audio issues, and some graphical issues but i won’t get into that because no one wants to hear any knit-picking.
maybe i just expect too much or something but In all i still stand by what i said and i don’t think the game is much fun.. obviously to me lol. as i said before i’ll definitely get this game if it goes on sale or if it’s on the game pass but other than that i most likely won’t pick up this game after playing the demo.

Try Bleakfaith (definitely refund) and then come back, this game is a 10/10 in stability and playability compared to that one.
But, BB is not the holy grail and I like this game quite a bit. I just beat the last boss and it was a very similar accomplishment to beating some of the BB bosses. The new mechanics are really nice, the mix of parry and dodge work great and the boss has well varied moveset, which doesn't feel random or unfair...
And, it's just nice to have decent graphics quality and at least 60 FPS, this is what BB doesn't have. Although the art style and setting of BB is hard to top.
Looking forward to the full game...
