Personally, I'd also like to see all a boss's lore automatically learned after defeating them. There's a few journal entries I still haven't found, and it's a pain looking for them. Unlocking unique gear, getting unique drops, or as you suggested opening up new areas of the map (or new types of dungeons? Then they don't have to change the main map, just add new dungeon rooms) would be great additions.
Even better idea, in the new area when you beat a boss. There are lore entries you can find the help detail what it is or how it possibly got there in the first place.
How would this work in a multi player game? Would each player defeating a boss get their own giant water castle? That could potentially mean a lot of free castles popping into the world. Where would they all go? Would the world change when an individual player does something effecting the rest of the world for everyone else?
I feel for multiplayer it would be how it works for terraria. if one player beats it, it unlocks the content for everyone. Thought since the boss would scale with players it would encourage more then one person to just speed through all of it by themselves.
I feel like multi big structures like a water castle would take away the importance of it.
I think corruption could be cool as an idea. Other humans being able to create bases, then from those bases they send out raiders of other humans, pals, and general weaponary. Taking em out gives you stuff you can need and stops the raids, you'd probably have to take out some kinda raid HQ kinda place to shut em down for good.
Beating the HQ would unlock some kinda raider esq gear for pals and some kinda unique raider like weapon like a harpoon gun or something evil-ish.
