I think if OP is a 'tailored-fit' person, then Tiger's mod suggestion will be ideal. Otherwise, grind until level 15 for that nitewing you'll see in the starter areas.
I put my first base basically where you start and there's a bunch right there to farm out to get you going. A nitewing shows up quite often near the mammorest spawn. Like others said there are mods you can get to multiply drop rates and all. Plus really close by is a small town where you can buy and sell basic goods and even a pet vendor tucked in on the right side that sells really cheap pets of all kinds iirc their collection changes over time. Once you get yourself a jetragon you dont need anything else really.
Direhowls have easy to make saddles, can be found as low as level 6-10, and are faster then the already mentioned pals. Jumping to attack a wolf pack in the early game is ether super fun or terrifying.
For early game Paldium check 95, -415 on your map. For early game ore check 70, -405 on your map. For early game XP never deem a pal species irrelevant until you have captured at least 12 of them. For early game Pal Spheres catch some vixys which only appear in a strip between about 95, -305 & 97, -550.

Antler Uppercut
My favorite starter mounts are Eikthyrdeer for land and Nitewing for sky. Eikthyrdeer's Antler Uppercut move can double as a speed boost similar to using a mushroom item in Mariokart. As for the Nitewing, it's basically the earliest and easiest flying mount that you can get, making it perfect for your first flying adventures.
Also, if you are more interested in something that looks cute, Chillet would work. You can get one either by capturing the Chillet boss or finding an egg with one. Eggs tend to be located around the starting areas of the game (most often near the boss, from my experience). The downside is that he has a cold body like Pengullet does, so be sure to bundle up.
