Jetragon - especially if you get the speed and stamina bonuses.
Fenglope - super fast ground mount with double jump.
I got one with swift , runner, etc on my lux and its lightning fast.
Killing things:
I try to stack a couple that the target is weak too.
For everyday I have another Jetragon that has all +damage skills.
As for ground, the new island has some really good picks. Celesdir and Azuremane are probably my 2 favorites. Celesdir has crazy attacks and despite being Neutral type can output some really good damage. Naturally learns Holy Burst, which can instant kill whole groups. Azuremane has a special dash attack you can do on ground or while in the air in addition to all its actual moves. Both fit through cave doors, and are still fairly fast when bred for combat, as the only move speed trait I have on them is Legend. Celesdir is tougher to breed, with only 1 legal combination outside of Celesdir+Celesdir, but if you're talking "endgame" I don't think that's a major consideration.
Jetragon - Fastest Flying Mount (For exploring)
Rayhound for running, jumping, generators.
Bellanoir Libero UR for genocide.
Lovander and Katress for emotional support.
4* Gobfin w/ Vanguard, Stronghold Strategist, Motivational x4.
If you can't solo a boss with this setup and maxed gear, it wasn't meant to be. You can swap the Frostallion for another mount depending on the type match up, its primary purpose is combat mobility because you will being out DPSing it by a country mile. I have yet to see any other build out that comes even close to being as efficient as this.
The server I play on also doesn't have "drop on death", so respawning is just a free teleport. Carry weigh pals and stuff like that don't mean much when you can just death warp back to base with your 800 Hexolite Quartz.

Yknow I always heard Galewing was good im curious about that and might have to try it next time im on. Could be fun with double jump boots and a grapple
the grappling web with 0 cooldown at 4 stars is incredible, even more fun to explore with one when proficiently mastering the web slinging. (found in northeastern desert at night only, or at all times of day on Feybreak, you may want to avoid using its signature web strike impact move until pocketpair patches the move itself up due to it freezing the tarantriss ai wjen riding or even stopping tarantriss from using any actions if its move is interrupted by a stagger while in it's animation.)
2: jetragon for speed, may need passives like eternal engine for added stamina if it is too problematic, also depends on whether you wish to use the pals moves and weapons (like jetragons rocket pod launcher) or your own weapons (like frostallion or shadowbeak where you can use your own weapons on their back like the new plasma cannon.)
3: Jormuntide purely for sneaking on to oil rigs or travelling to places that have SAM launchers preventing aerial traversal like the new island of feybreak.

tbh I think most pals can be made viable for combat, I always force a Katress Ignis into my party for instance because it looks like a FF red mage :)
Real suggestions would lead into meta like Raditz mentioned - that's peak damage. Alternatively, I suggest leaning into a theme like all cats (Nyafia, Cattiva, Grintale, Katress, Mau, Tombat...) or maybe a Harvest Moon team (Ranch pals like Woolipop, Mozzarina, Melpaca, Lamball, God-King Chikipi...) but I guess you'd lose all mounts lol. Color theme?
If you go red or just for consideration, Dogen is a great party member, has a strong base atk stat, a unique counter skill, and can warp you home from nearly anywhere.
And it's hard to recommend something unique, because it will most likely not be as strong and effective as the same popular/meta pals anyway.
I could name my team - but it's very fickle and just subjective, and also still has most of the meta pals.
With Quivern as a flying mount (do not really like Jetragon for look and because it's based meta), Felbat, Selyne and Bellanoir as a power team (again almost based), 3-4 gobfins are always on hand (based support team again), Dazemu (based) as ground mount (I used grintale for fun before)... So...
I find it hard to recommend something interesting that I haven't tried myself... You won't get any fun if you keep pals you don't like. And there aren't many truly unique options. Unless you try using Tokotoko as a personal grenade launcher. I tried it and even got 4
The only crazy idea that haunts me personally, and that I would like to try to implement, is a colony of beegarde and elizabee. I'm not sure that it will be powerful... but it will be fun at the very least. I was always curious how strong elizabee could be with a full stack of bees in the pocket.
It is possible to add a colony of warsects to the arsenal - to create thematic bases in the form of an anthill. I do not know for sure.
But the truth is, if you get to end-game content again, you'll still want to have the same meta pals to take down Raid Bosses with (well... or use rocket launchers a lot).
Overall I feel like passing down Legend to mounts is a fun strat for lategame pals, it boosts movement speed noticeably and you can obtain it without insanely lucky RNG.
