That said, I remember swapping out some moves that felt awkward to use while riding, so that may be your problem.
I have no problem aiming after I changed the sights to be bigger and a different color.
You also can't use the Ring of Mercy with your pal if you are not mounted.
I see videos of people doing boss fights not mounted. In that case I can see the advantage, in many other cases, I find mounted to be more fun at least, if not the best method.
And if I brought Shadowquick, I don't get off to fight Paldius & Necromus either.
The first thing you need to understand is that you can use your gun while mounted. Make sure it is equipped and readied, then hold LT to aim. For most mounts you'll then aim at your target, and the aim-assist is tuned siily-high so there is no excuse for missing. You can fire while moving too.
If you're on a ground mount the situation isn't optimal, but you can fire off your skills then reposition quickly to let them recharge.
Mounted combat on FLYING mounts however is insanely effective. Most enemies never look up. You can use something like a single-shot rifle or a rocket launcher from the back of a flying mount and you have all the time in the world to line up your shot since they almost certainly won't notice you if you're up in the air. A lot of enemies can't even attack you up there, while you can attack them with complete freedom.
