LEvel difference affects the damage you take and deal. So if the pals are higher level, you will take more damage.
But for the most part I really don't think I'm noticing consistently unusually high damage. from individual Pals. Once in a while I will pull out a Pal and before they can get an attack off they're already half health, I've just attributed that to my uncanny ability to totally ignore the elemental Strengths and weaknesses.
If anything it's the Human NPCs that seem to have unusually high damage to me, coupled with their high rate of using that lunge attack. still manageable but like chill, lol

I think I'm lvl 51 at this point? Maybe 52 or close to it.
Oh btw theres a new trait u can get by breeding called serenity, gives u +10% atk and 30+ reduced cooldown on skills, its extremely useful for pals and helps with that downtime, basically makes u able to shotgun skills that arent the 150 power ones
