Huh, looking at this myself apparently I mis-remembered some of the level requirements for some of my recommendations. For some reason I really thought Quivern was in the 20's part the technology tree, and I didn't think suzaku was in the 40's...so with that information I guess ragnahawk is the way to go since its both good and comparatively low leveled. It's stamina is just junk though

A link someone posted earlier tells you pretty much all you need to know about the various speeds of mounts. However, the only Hybrid mount I've found is a level 50 Legendary with its saddle unlock at Level 48.
"But if two of my five slots are for mounts, that limits combat options!" Not exactly, because you can just type-cast your mount and build your team around it/them. Also, it seems like almost any Pal can learn any skill fruit, so my best bet so far has been to just load up an Anubis with any and every skill I can. (Except the self-destruct moves. Those are the worst.)
EDIT: OH! And equipping weapons on your pals is, indeed, like to a saddle. You craft an items, it unlocks a firearm, you bring that Pal out, and then you use the Pal to fire the weapon. Select Pals have weapon potential. (Foxparks turns *itself* into a flamethrower, Lifmunk gets an SMG, Tanzee gets an Assault Rifle, etc.)
You have to have them on the team. You put them out and if you made a saddle for them, you will see the "mount" option. As far as guns and stuff goes, only the pals in the tree that say they have that feature can do it, and you don't have to build them anything special beyond whatever the item itself is. After that, you just send them out and the game will tell you what to press in order to use it
Once you hop off, its a normal Pal in combat. Not like Glider Pals.
Works same as other Mounts for land/sea/air.
Ah...you might want to temper your expectations on the water mounts...
i suggest going for a vanwyrm even thou its some of the slower birds but its fairly common.
go for beakon breed if you dont mind checking breeding list but that might skew your views on wild pals being hard to catch and generally worst.
