Basically do what you want and play as you like.
I like having 2 traversal. Ground and Flying. The rest being elemental attack boosts on my attacks.
If they would give us too many slots then we don't have to make a choice. It feels more meaningful like this, you actually have to think about who to bring instead of just bringing everyone you can.
Would be nice, but don't see it happening.
It's vaguely like what you ask - some pals actually have exclusive roles in your group. I cannot for the life of me name the exact ones but you can have one that fights alongside you even if you are riding/using a Pal you have summoned and a third one collecting all your loot. So you have 3 out at once doing stuff... Not quite what you want but yeah they can have Pal exclusive skills. Maybe you can have more out than 3? I dunno. I don't see it mentioned much anywhere but there you go.
I think some are supposed to increase your weight limit if in your team and there are probably a lot of other things I never noticed as well but I think I tried the weight limit one and I must have done something wrong because it did nothing.
Elizabee's stats grow the more Beegardes you have in your team. Sure you only have one Pal out to fight alongside you (the Queen Bee), but the stat bonus is really nice. So that's another way to use the slots. I think the more slots they'd give us, the more OP would Elizabee get with additional Beegardes. Just four of them give you sweet +48 to attack and defense (1 Beegarde gives +12). If you boost the Queen with condensing other Elizabees, her bonus stats grow even more, not sure how much. And then there's the statue, where you can use Pal souls to boost attack and defense even more. Yea, more Pal slots = more Beegarde Pals in your team = more OP Queen Bee. I guess that's not the reason they capped it at 5, but it would be one more reason to not add more slots in the future.
EDIT:
Ok, my party currently looks a bit similar:
Lady Thor (because why not) - Beacon - main flier, fighter of things in the wilds, helps with catching Pals
Miss Fawkes - Ragnahawk - main boss killer, alternate flier if things go wrong
Isabeau - Galeclaw, she's awesome! no need for a regular glider and the one handed use is a sweet bonus with a handgun
Donna - Lyleen Noct - the freshest addition, has ice attacks, but is a dark type, pretty handy and can heal as a bonus
Rose - regular Lyleen - main workforce in the base, she crafts everything I need, and can heal me during the heat of battle, including boss fights, also is quite capable to fight on her own.
Would I need more slots? Nah, I'm fine. Having two Lyleen might seem a bit pointless, so perhaps even less slots would be enough, but I'm not complaining. 5 is just the right number for me.
Main flier (currently Vanwyrm with good passives)
Galeclaw (for the glider and discount on stamina drain for the flyer)
one mission-specific pal
and one I'm training up for working at base
