I don't really mind the time it takes to hatch eggs per say, in fact I actually think the timer could be a good thing to get people wind down and "come back tomorrow". However that only really pans out if as you said you are are on a server running 24/7.
When it comes to single player on the other hand, if they think I'm going to sit around for 24 literal hours IN GAME.... yeah I'll just set my timer somewhere between instant and instant and feel zero regrets and also maybe not bother playing tomorrow at all because I've already gotten my eggs.
If however the single player game continued to progress the timer then I'd be fine with letting them hatch over time which again has the added benefit of giving me a reason to play the game the following day.
If the egg hatching timer for single player was persistent (checked the system time and accounted for the out of game passage of time) it would IMO fix the whole timer issue for single player.
Edit: The other thing that really doesn't work for me even on a 24/7 server is the Heating/Cooling mechanic. I get what they where going for and if it was more consistent it would work but because the Pals are so bad at choosing/staying on task, not even taking into account the server unloading areas. You pretty much need to sit there for the whole hatching process manually assigning/remove the Pal from the Ignition/Chilling function to get any remote benefit from it.
They do acknowledge the mechanic and the timer is set for a certain period based on type and temperature, if you are unhappy with the default settings YOU need to change the settings for your personal game world.
There is nothing stopping you opening those eggs, 24 hrs seems reasonable, you can play for 24 hours or you could leave the game running while you sleep even, its up to you how you solve YOUR issues.
