Which Pal is the true mascot ?

Relaxaurus is the one which is the discord icon, grizzbolt is used as an example of pals using guns and other stuff, and the community has really latched onto chillet and depresso.

I would vote chillet, because in addition to being cute ice dragon ferret, they make you quite powerful when mounted by giving you dragon damage attacks, and has stab bonuses for some of the best elements.

So they combine both appeal and functionality.

It's definitely Cattiva. They should give it a legendary skill "Cat-fu", make Cattiva wandering merchants, and have a pal kidnapping trap with a Cattiva offering cotton candy.

In-universe idol and game mascot are a bit different, though. It's like how Pikachu is actually a really bog standard Pokemon in the Pokemon universe, yet manages to be the Pokemon mascot.
