Did someone try this, how is the performance in dedicated servers vs self hosted ones

This completely depends on the hardware. If you are talking about testing the 2 out on the same machine to compare, I've not noticed a difference. I'm currently hosting a dedicated server on the same machine I play on and performance does not differ from when I was hosting in game. That being said, I have a beast of a machine, so results may vary. Performance will mostly depend on your processor and ram, as the dedicated server doesn't tax your GPU.

Given the mostly negligible difference in performance, the obvious benefits of a dedicated server are preferred, especially if you like logging in to find all the resources your pals collected while you were away and all your eggs ready to hatch.

I ask this because i am on:
R9 5900x
64gb memory
Rtx 3070

And it looks like the more i travel the less fps i will get, my vram is filling nonstop... Is it just the optimization of this game ?

Very likely.
I'm running:
R9 5900X
32.0 GB 3200 Memory
RTX 3090

Granted I have a lot more Vram, but that has nothing to do with server performance. If you are seeing a performance hit and maxing out Vram, it is likely an optimization issue client side. I would advise you to teleport more often. That may clear out the vid memory usage.

I don't expect optimization improvements till the game is much closer to a full release.

Yeah, it seems like teleporting kind of fixes the problem, is just weird
