If the ones you get end up being the same gender, then keep waiting for one that is the right gender. This doesn't take hundreds of hours. You can even create pals of a given species by breeding two other pals of a different species in most cases, meaning you can breed traits across species. Get the right seed stock of middle of the road pals that have the traits you want, and you can breed those up or down to whatever other species you want within a couple of hours.
I've already made like 5 perfect flying mounts and 4 or 5 perfect combat pals. I'm now working on an Anubis that has Artisan/Serious/Work Slave/Lucky to max out work speed. So far I've got a few with Artisan/Serious, but nothing with Work Slave/Lucky to combine it with.
