You gotta beat them with bat if they dont do it.
Which pals and what are you trying to get them to do
It's one of the many intermittent bugs with them working.
If there is any partly finished work the game seems to concider it as "No work here" when throwing pals. Try collecting anything that is done and toss em again.
Pathing or collision issue possibly, or their AI has a higher priority set.

Even when i assign a Pal to a specific task AND it starts doing it, it'll usually wander off a few minutes later to do other chores.

Would love to have Kenshi's system of task priorities where you only do X if Y has already been completed.

Try to avoid putting any workbenches, farms, beds etc right on the edge of the base. Pal's can't walk outside, but that doesn't prevent the pathing AI drawing a path that does go outside the base perimeter leading them to getting stuck.

Also try to avoid terrain with sharp vertical sections (hills, lake edges, ruins etc) as that can cause them to get stuck, or sometimes clip through and become stuck out of sight. Can also happen to you too. I've gotten trapped several times on the wrong side of textures.
It's the game not always being able to recognize you tossed them at a valid station. Not much you can do but keep tryina workaround it and hope the Devs fix this in the future. Personally it's easier to do that with smaller Pals. Medium to Large size is where the problem gets bad. Even worse if its an indoor base. Game doesn't handle roofing very well so i'd recommend having 3 or more walls (vertically) worth of tall space to help prevent the game thinking you're tryna toss your Pal to the Ranch in the second floor or something.
This is probably a bug.

This is what i've run in to.

Assign pal to station manually. They work on it successfully. After a while they walk away and do something else. The station shows no pal assigned and no work is being done. I can work on the station (if applicable). Any pal i throw on the station, including the previously assigned pal will report that the message about no viable work found. This is not me missing the station, i've had this happen a ton with breeding grounds and i can reproduce fixing it.

To fix it, you may be able to remove the pal you assigned to the station from your base and add them back. If that doesn't work you need to rebuild the station.

Note that when this happens, i've observed pals be idle over working on the bugged station if there were no other valid jobs of that type. IE when my cooking fire bugged out, my kindling pal went to idle because there were no valid jobs for it except bugged station.

I think you just need to not manually assign pals now.
either pal has set job to finish or another pal has priority, or it needs to eat
from what i experience
If the sanity is low, they wont do the tasks, make sure you have a hot tub down, throw them in them to reset the AI and then place them where ever you want them to be.
I'm trying to make Robin Robinquil work on my sphere assembly line
Yea there san is 100 so idk
It's worth noting that if another Pal wants to use that workstation, it'll kick off whomever you assign to it so that might also be happening.

I had 5 different Pal's join me for 5-10 seconds each consecutively while crafting something so my 'handcrafting' Pal's spend 90% of their time just wandering between jobs rather than actually doing anything. A lot like my colleagues at work.

Try focusing on Pals that can *only* do one thing, instead of ones that can do everything as those ones will all end up doing the same thing rather than a mix.
My pal is not doing farming under 2 story tall (roof). Especially the large flying pal clip through the floor. The game is pretty stable if don't confuse pals with multi story buildings
This may just be rumors at this time but:
-I heard that Pals that eat mostly uncooked food like berries are constantly close to being not satisfied, spending more time running around your base between eating bits of food and doing things, making their AI wacky. So if you set up your base where they are just eating berries they may be performing poorly because of how satisfaction may play a role in their attention span. Maybe eating cooked food lets them perform longer without interruptions.
-Some Pals have "secret priority" supposedly where they will rather do something other than the provided task. Not sure if there is a way for detecting this without intense testing.

You said you had the correct level for their gathering I am guessing? Some stuff needs a minimum skill level to gather, or the pal will just ignore your command.
Minor thing that other mentioned was yes, some pals have pathing issues where we can't see the problem but they can't reach the gathering point for some reason.

Can confirm this is a huge fix for me. Which sucks I like a nice neat crafting room inside my 'factory'
