In some other rare cases (which I believe are bugs) a workshop just stop being "workable" despite the fact that pals were working there some minutes ago in automatic mode. In such cases I delete and rebuild it and it starts to work fine.
I believe demolishing and rebuilding the building in question also fixes it.
I usually just let them do what they want and they get around to doing what I want eventually.
it seems like some jobs will perma assign, and some wont.
Putting the fire fox on the bonfire to cook, he will always immediately stop whatever he's doing to cook whatever I set, and will continue to do it, only stopping to eat or sleep.
It also seems like there is a "soft priority" code for Pals, where if you pick them up and throw them at something they'll try to prioritize that over everything else.
An example is the duckling I threw at the crafting bench, anytime I try to craft, or set something to craft, he will immediately drop whatever he's doing (unless its eating or sleeping), to help craft, or craft it himself.
Another is setting the second duckling to the berry patch, whenever its ready to water, he will immediately drop whatever he's doing to water it.
