As for why 10? It's not that you're supposed to catch 10, it's that that's your limit for first-time XP bonus, because the game expects you to catch more than that for one reason or another; whether that be for reasons I won't state for spoilers, or for, breeding, or cash income.
As for pals your level being able to lay you out flat: Put some points into health. Also: Get your Pals to do the hard work, you're just a flimsy little human, not a demigod like most ARPGs. Getting other things to do your dirty work is the point of the game.
And "it's a bad mechanic because I don't understand it" isn't a good reason for something to be called bad.
Also, you bought a mon catching game to complain about the mon catching aspect of the game, WHAT?!
Crafting gives effectively zero xp. Killing wild pals and humans does give some xp, which is nice earlier on, but eventually that too falls off. I'm at level 40 and it's 2 xp to craft something, about 100-500 to kill something level 30+, and like 9k xp to capture a pal that I haven't captured 10 of yet. That is THE way to level up.
You are now high enough level to craft a shield and armor, there are a lot of ways to mitigate damage including using combat pals and focus on dodging and let them fight for you.
I recommend messing with your world settings. You might find the game more enjoyable if you tune them to your preferences. That's why it's a sandbox survival staple to make them fine-tunable, it's not to make the game easier/harder exactly but to let you adjust things to the levels where you have fun.
