can you fully play it solo?

Will probably require more grind since you have to make everything yourself, but yeah I don't see why you couldn't finish this solo.

offline solo is a option.
i play it, you can tweak the settings so you gain more materials etc.

yes, i played for 10h yesterday solo, it take more time getting materials though, but for that you can adjust the gathering rates and also you can adjust the dmg and hp of enemies

Been playing it for a good few hours now solo, and it's absolutely fine to run things solo, you just need to be aware of the stuff bossfights can throw at you.

Custom difficulty settings so you can tweak how you want to play and adjust the level of grind. But otherwise yeah Solo is doable. I mean you'll be surrounded by....your Pals.....ba dum tss

Solo is 100% possible. Most of the work is done by your Pals in the base, so no worry about the grind. The real slowing down point vs. multiplayer is how fast you can catch Pals to populate the base and cuing up builds, but even that isn't all that bad. With the way Pals help with just about everything you almost can't even tell a difference between SP and Co-op outside of boss battles. However, if you just expect to need to level up more before a boss fight it isn't too bad, and you also have the option to adjust the difficulty if the fights are too hard.

I was slowly exploring the game alone yesterday. Then I joined a new playthrough of a friend. Oh, boy: Having some people with you are speeding things up a lot. But right now neither singleplayer or multiplayer feels boring or tedious. It's a pleasent experience.

I imagine. I mean your palmon are basically helping you with all the grindy stuff that would usually eat up most of your playtime.
