I like to run/climb so stamina at ~150 is ok, I will put more but my priority is weight rn
I put a few points into atk but that didn't do much as a good Pal will outdamage you by far.
Never touched Defense, gear seems to be decent at keeping me alive
Work speed is dumb. Just have Pals do it
Weight is king after HP gets high enough to keep you alive. I'm currently lvl 19 and moving stone/wood/ore is killer even with Cattiva (pink cat thing in most starter locations)

Weight capacity is fine to have, but not a dealbreaker with 300 weight if you haul all unneeded items. +2 to attack is pitiful. Basic stamina is good enough for running and combat. Health is huge and always worth to avoid 1shots in basic armor.
Really like the weight for the heavy stuff/long explorations where you don't return to base for a while. And stamina helps my playstyle since I sprint, dodge, glide, and swim a lot and running out of stam in the middle of something is really annoying.
But whatever fits your playstyle the best!
Yes the bird you can saddle at level 19 and ride it. That is your flying mount for traversing long distance and up/dawn across water, etc.
Stamina isn't super necessary. You can live without it honestly. Try running and pressing C to slide down hills. Lets you move faster. You can combine the slide into the glider to move faster on the glider. But you get a grappling hook and flying monsters. The hook lets you go out like almost half of most mountains.
You can get away with no HP on casual/normal because damage tickles but anyone playing on hard that has 4x dmg will need some health.
Generally I feel like once you start riding a pal you don't need to use your own attack much anymore, so feels a little pointless but still.
You only need ~600 weight to get started with a decent amount of wood/stone/pal stones and then later on you get tons of resources in base from pals. Same is true with ore although it is more bothersome to transport to main base since it weight a lot (although it is possible to fast travel with any weight so can make a mining base and just pick it up and fast travel to main base and put in a box).
Getting 1k+ weight really makes carrying stuff easy though.
Level ~30 enemies hurt quite much so health is good although the regen is so slow. The player can take damage while riding a pal so that is a good reason why health should be one of the most important stats.
OP didn't mention difficulty level, so I shared my thoughts from my experience. I enjoy playing on normal as, you know, that fits my playstyle.
Happy you're enjoying playing on hard, but it ain't for me.
