Most demanding graphics settings?
What would you recommend turning down first?

Idk your specs (where you lack of) if you're limited by vram or cpu limited or whatever, but as a open world game, things like draw distance tends to be a choice to tone down. The rest is the obvious ones AA and Shadows.

Pretty ancient PC, i7-7700/GTX 1070 8GB/32GB ram, my gpu seems to struggle most even though it's better than the minimum requirements.

CPU: AMD Ryzen 7 5800H
Ram: 32gb
GPU: 3060

Settings:
Motion Blur off
Grass: High
View: High
Shadows: Med
Effect: High
Texture: High
DLSS: Performance
FOV: 75
Ride Camera: 1

Smooth as butter

Turn down shadows to low, view distance to Medium, texture and effects to med or low grass to low and you should be more then fine.
