I appreciate that you think its this simple. gamers need to stop acting like armchair developers. try to keep in mind that the core developers are a small team of 5 people (who probably outsource to some degree, but still)
your desire for a macOS build is absolutely warranted. pretending its an easy task or that you're a competent game dev who has actually published a title and understands what splitting your codebase like that _actually_ means for maintenance and bugfixes and updates, is not.
The Mac OS popularity is only at 15.39% vs 72.96% windows and the headache of using mac specific programs, plus paying for Mac specific licences. Just cash barrier after cash barrier.
Apple needs to make it more accessible.
