But yea I'm pretty sure some are required for progress. You can check the wiki:
"Druidra the Wild Titan
Druidra the Wild Titan is a hydra found roaming around Azeos' Wilderness.
Defeating Druidra unlocks the Soul of Druidra, which is required for progression."

In case you don't wanna check the link, you can be 300 tiles away from the wyrms and the wind organs will pull them to you. No need to chase em down. As long as you learn the basic loop from one scanner, the organ covers approx 1/3 of their loop depending on where you stand in the pathing area.. So if the organ doesn't summon it, pick it back up, wait a couple minutes, and drop it again.
The sea worm is optional.
The above roaming bosses will come to the player if their item is place within a (fairly large) radius of where they currently are. You just have to wait for them to be somewhat near you and then place the item. So you can fight them in prepared areas if you want.
Final story boss is always in a set location.

The "final" boss in the outermost biome is also optional. It follows a Gorm-like path (the big worm earlier) around the biome.
All the bosses drop some really good gear especially the Sea Worm with it's helmet if you like critical hits.
Rest of the slimes, water worm etc are all optional, its worth noting their drops might be useful to how you are playing though, so "optional" is really up to how you like to play gear wise.
The atlantean worm also drops a max hp food that can be cooked into a powerful hp regen aura food, so imo to me its mandatory for example. But to the story, its not.
