A boss will "reset" and get all it's HP back if you're too far away from it for too long ("too far" generally means the boss is offscreen) or you've pulled it too far away from it's spawn point.
It's not difficult to avoid resetting bosses in this game. Just keep them on your screen while you kite them in a circle. I will also mention that you don't have to fight that boss immediately. Just pin the slime's location to your map and go explore. The further you go the better ore there is. Tin is found in areas with clay walls (light brown) and Iron is found in areas with stone walls (gray). The Clay and Stone biomes are always placed opposite from one another so you can use one to find the other.
Make yourself a tin pick so you can mine some iron. You should have no trouble against the giant slime with iron gear. You can also find fish in the clay biome that, when cooked, will let you ignore the slow effect that ground slime inflicts.
On a final note some later bosses will just despawn if they reset, wasting the mats you spent to summon them. It would be a good idea to learn how to avoid resetting them.
Tip: Learn to dance. Each boss has "tells" that indicate when they're going to do something drastic; learn the tells, learn what they mean, and learn to deal with the results/fallout. An awful lot of this game is pattern recognition.
If you are well prepared it's very doable. If you are poorly equipped and not using good food then you're making life hard on yourself.
PS you can dig the ground slime up with shovels and hoes. There are items and foods that let you move faster so you can dodge attacks easily
