Mold water will fill in gaps just like regular water so if you don't want to bother with terraforming a section of the mold dungeon you could dig a channel leading to another river or any other large open space with no floor.
Do be aware that the mold water will 'infect' and replace any water it touches so if you plan on letting it into an existing lake or river I'd set up some kind of containment before hand unless you're ok with having a large section of nasty brown mold water somewhere. There's no easy way to drain an area of water, so once it's there, it's there.
