1.) Much of the 'meta' Divisions, aka the High Tech ones, are all that Nato had in Germany at the time, as the whole game plan was that they'd act as an anvil to hold the Soviet Sledgehammer until the proper units were hauled over from Stateside. The reason for this was simple, you don't want to put all your pawns in there, because if Soviets press a funny button in the Kremlin and a pretty flashy light turns them into radioactive dust, you might be in trouble.
This was not a problem for the Soviets however, as they always knew the West would never attack, thus why they would, and could, stock up the cream of the crop to the border and launch such an offensive that is primarily stocked up with their best equipment.
As the game currently depicts the opening weeks of the war, much of the good stuff is still across the Atlantic.
2.) Variety. Personally I am not a fan of the High Tech Divisions, I don't like them, and I am glad I have option to play with more reservist oriented Divisions instead. There were plenty of option for the High Tech Divisions, you got 3rd AD and 2nd Blindee as you mentioned, but also the 1st AD, 5th Panzer, 11th ACR, 82nd, and so on, all using just about all of the most modern stuff Nato has, and only that. Aside from Süd and relatively recently the 35th, Nato severely lacked in actual proper Reservist Divisions, which Pact had aplenty of, while also having the topped up Divisions with modern stuff.
So that would be why you are getting more of these kinds of Divisions for Nato, to round up their roster so that more playstyles are catered to.
US has 3rd infantry - basically a mech version of 3rd Armored (with Bradleys and even a few HA)… but afaik that’s it for HA at least. USMC have a lot of cool tech - but only M60 tanks, no Abrams at all (unless Eugen will add some MtW M1A1(HC) to them - which are rebranded HA in this timeframe).
US version of 27th is a 9th Moto that we already have in game. It’s the US prototype division… and it’s pretty light one, yeah.
Overall, there’s not much to add outside of USMC. And as I know there’s nothing like 3rd Armored or 27th for US
You'd be surprised how many people can actually bother to micro even this little, thus why they tend to gravitate to Divisions like the 3rd AD and 119.
