Also whatever bear form DAMAGES and does NOT destroy will yield resources of the bear damage on death if hit in vampire form. So Bear is useful when farming, just not directly for big rocks.
I've done that many times and I find it to be hugely more convenient than having to steal a horse every time I want to get back with resources from there. But you're of course welcome to play the game the way that works for you.
Also, if you are still in dominating presence and you can't seem to visually locate your charmed npc, just interact with the servant coffin or prison cell (to convert or imprison, respectively) and they will teleport there immediately.
I mean you get thousands of copper for making a few explosives. That sounds a lot better than going around wasting my time whacking on copper nodes. Even easier than that is sending missions to the bandit copper mine.
On the subject of horses, apparently the max value for the speed stat is 11, so if you find one that's in the mid to high 10s, you're doin' well. I tend to settle for anyhing 10.4 or higher, but I guess if you really wanted you could probably keep rolling the dice until you find that perfect 11 horse. With how easily they die, I personally don't think that's worth it.
If the game had similar veins for iron or silver, then there'd definitely be a greater justification for the explosives (in PVE). Perhaps I'm just not a fan of straight-up resource farming in most games and I like the element of "fighting for your stuff", especially when there are so many other things to get on top of the focused resource, particularly when bag space and item stacks are limited (assuming you play with default settings). The game forces you to prioritize and balance, even when time isn't of the greatest concern.
