Coal
What can you do with the coal left over when you no longer need it (when the generator can only use oil)?

I even find 50K packs of coal in the exploration of Frozen Lands which I can't use at all.

You can convert coal to oil

If I rembember correctly there is some factories that uses coal to make oil/goods/materials.
I don't know if there was an option to switch it out though when the coal runs out so maybe not the best option.

You find it worth taking the "only oil" generator upgrade over adaptive pumps one, how big of a difference in heat yield for oil burning is it for the first one?

you can utilise coal liquification plants.
With industrial districts and enough researched buildings, you can create a loop of material, coal and oil so that you can get more and more from the same starting quantities of each. This means you then only need an infinite food resource.
