DO NOT BUY if you do not meet minimum requirements
As the title says - I heavily suggest avoiding the game if you don't meet the minimum requirements. As much as it sucks to say, you won't simply be limited to performance issues like you would most games, for some reason FP2 has a issue where you'll simply be unable to progress past a certain point in the game and support have no solution for it.

Despite me being just BARELY under the minimum requirements (CPU fine, GPU is 1060 w/ 3GB VRam), 32GB RAM, I'm unable to play beyond week 208 because my game will just crash due to trying to access a area of memory that doesn't exist.

Unless if the game gets put on GeForce Now (Support are unsure if it'll be added or not), if you do not meet minimum requirements I would avoid paying for it once it gets released. You're unlikely to run into this issue until you've put in over 2 hours of playtime, similar to what's happened to me.

Support also mentions that it's unlikely that the game's minimum requirements will change after the official release.

I'd have happily played the game with occasional crashes or low FPS - I was genuinely enjoying it, but unless if they somehow manage to fix this then I would be careful since the game is quite pricey.

Really disappointed that unlike 99.9999999% of games, FP2's minimum requirement is a extremely strict 'Meet this requirement or you will be screwed'.

Do not buy even if you do. This game is nothing like the original. If you liked the first game you'll probably hate this one.

Fun fact: People can like more than one thing if they allow themselves to do that.

From where comes the disappointment. From the fact that 11bit studios properly checked what are the minimal requirements and haven't just shooted in the dark. Minimal requirements are MINIMAL requirements. It should be expected that less than minimal is not enough.
+what you wrote sounds more like a bug than a performance issue.

I do not understand the particular run time issue you have encountered. But it is a beta. Steam will probably still refund you if you cannot run the game after two hours.

False. I’m a big fan of both. Leave your bubble and you’ll see that many others are as well.

My expectations, and the expectations of most people, are that minimum requirements = i'f you are below those requirements, expect performance issues like lag or stuttering' - not something that simply crashes you to desktop 24/7 once you've reached a certain point, with no way to bypass that point of the game.

I hope it's just a bug, yes, but support have told me quite bluntly that it's due to me not meeting minimum requirements.

Was that steam support or 11bit studios?

11bit studios, support provided through email after filling out the form on their website.

I tried with a RTX 3050 and i9 13900H laptop it was at 25-30 on low. The game does not look bad at low.
It’s not very smooth but playable (these kind of games does not require to be at 60 but of course it feels better).

I guess all I can I say is that I feel bad for you, since 11bit studios followed the logical definition of minimal and not the internationaly accepted one. Those damn technocrats.
BTW Someone should regulate that AA and espacially AAA studios should give minimal requirements as actual minimal requirements and recommended requirements as those in which you can play in the constant 60FPS in medium/high settings.

Just refund, NEVER try to fix a game if you can refund it

What are you smoking right now. Are you serious or is it just sarcasm that doesn't make sense.

This is just a pragmatic advice.
When a game runs bad, I refund instantly and eventually purchase it again if I upgrade my Pc or if the game is optimized after (Liie Callisto Protocol).

But why not both?

Virtual ram is.... Not graphics card, so I'm somewhat puzzled, but his 32gb of ram could still be fifteen years old.
