Once you've got some good weapons, trinkets and skills, you can even just melee them. Might not work without having to tank a hit, but it's reliably winnable.
And they're also very easy to hide from - they're too fat to pass through most doorways, and their ranged attack is easy to dodge.

The Collector is the opposite of the ghostly skull, whose entire body is one weak point.
I wish they had a weakness, for example, fire, which could be exploited, since they can't be headshotted
