I checked and in SaveFile0.es3 I can see the below section's value being empty, which may be the reason, but I'm not sure what the cause could be - but I would check how the todo_tasks are being cleared when restarting the day.

1) I was trying to show my partner the ghoul behind the tree on day 2 but he missed it so I restarted the day. I tried to get through my to-do list, bought the build book and chicken coop but the B key didn't bring up the book. I restarted the day and tried quitting to main menu to resume the game but I still couldn't access the build book.
2)Following an encounter with a torch wielding creep in the forest at the front of the house I passed out as I stayed up too late. I woke up in bed -$20 but it was still nighttime. The sun didn't rise and the moon didn't move... not sure if this is a bug but the painting showed the normal scene of the hallway and closed door so I felt pretty sane!

But this also puts you at the end of the Demo.

Ran into this same issue. I had progressed from Day 3 (I did "Restart Day" on Day 3, progressed to Day 4 without issue) made a mistake on Day 4 of not focusing on the To-Do list. Selected "Restart Day" and To-Do list was empty. "Restarted Day" another time to see if that would fix it but still a blank To-Do list. Tried to see if I could progress the day if the tasks are done (thinking the To-Do list is simply not showing the text but the game triggers are still present) and couldn't sleep.
Well at least I can retry from the start and actually build a proper chicken coop with a fence so the fluff balls don't run off (which is the reason I restarted Day 4 in the first place)
Apart from that great demo I got spooked many times and one time seeing things from the corner of my eye (and that thing following me into the house I think it had antlers)
I did hit escape during play to check some settings/pause the game. I also did that with the first playthrough, but didn't get the SAVING bug, just the missing cat.
Also noticed more visual issues, I think screen tearing, but not sure. I have FPS limited to 60 with Vsync on. Seemed to occur mostly towards the bottom of the screen.
Edit: Found the cause of some of the visual issues. I didn't have the monitor specs set right in settings.
The most persist issue I've seen is that saving after a certain point seems to roll back to what might be the beginning of the "chapter." Certain progress seems retained, like unlocks, but any modifications to the farm are rolled back to that earlier state. This includes all the garbage on the 2nd floor being put back after that objective was cleared with no way to reclean it.
Seems to be the same issue Silent Crow mentioned.
First of all... Congrats on this project of yours! I really enjoyed the Demo and I will buy the game as soon as it comes out!
The bug I encountered was related to two wolves: they followed me inside the house, I killed them in the kitchen and their bodies remained there for days, until the experience was over. I was unable to move and/or sell them.
It would be amazing if it were possible to remove them or if they disappeared overnight.
Other than that, I know it is a horror game but I would love to have more daylight just to explore.
The last thing: sometimes when you load a lot of things to sell, some of them come out and go to the ground. Is it possible to the objects to stick to the trailer?
